Ingredients
  1. - 2 lbs. beef, cut into cubes
  2. - Salt
  3. - Light olive oil
  4. - 5 cloves garlic, chopped
  5. - 1 cup fresh pearl onions, trimmed, peeled
  6. -3 good sized hefty gold potatoes, peeled, cut up
  7. -3 good sized carrots, peeled, sliced
  8. -2 celery stalks, sliced
  9. -1 cup dry red table wine
  10. -4 cups beef broth
  11. -1 tablespoon balsamic vinegar
  12. -1-2 teaspoons dried Italian Seasoning. If you don’t have a mix already you can add a mix of thyme, sage, rosemary, basil, etc)
  13. -1 bay leaf
  14. - Ground pepper, to taste
The Process
  1. 1. First off, set up your crock pot and turn it on to high.
  2. 2. Season beef cubes with salt and pepper.
  3. 3. Put the olive oil in a pan and brown the beef cubes {it’ll really aid in the flavors of your stew}. Turn the pieces to make sure you get all sides. When the beef is done cooking, toss the pieces into the Crock Pot.
  4. 4. Next, add in all of your veggies and the garlic. Pour in the wine and broth and stir to combine.
  5. 5. Add the balsamic, herbs and ground pepper.
  6. 6. Place the lid on your crock pot and it’ll finish the cooking for you!
  7. Cook on high for 4-5 hours, 7-8 hours on low
