Ingredients
  1. 1 fully cooked, Boneless Carving Ham (about 6 pounds)
  2. Easy to carve ham
  3. Boneless Carving Ham is applewood smoked and perfectly glazed.
  4. 1 tablespoon whole cloves
  5. 1 can (20 ounces) sliced pineapple
  6. 1 cup apricot preserves
  7. 1 teaspoon ground mustard
  8. 1/2 teaspoon ground allspice
  9. Maraschino cherries
Instructions
  1. Preheat oven to 325°. Place ham on a rack in a shallow roasting pan. Score the surface of ham, making diamond shapes 1/2 in. deep; insert a clove in each diamond. Bake, uncovered, 1-1/2 hours.
  2. Drain pineapple, reserving juice. In a small saucepan, combine pineapple juice, preserves, mustard and allspice. Bring to a boil; cook and stir for 10 minutes or until slightly thickened.
  3. Spoon half of the glaze over ham. Secure pineapple slices and cherries on top and sides of ham with toothpicks.
  4. Bake 30-45 minutes or until a thermometer reads 140°, basting twice with remaining glaze. Yield: 16 servings.

  1. 1 spiral-sliced half ham (Paula prefers Smithfield)
  2. 1 20-ounce can pineapple slices, juice reserved
  3. 15 to 20 whole cloves (optional)
  4. 1 small jar maraschino cherries
  5. 3/4 cup packed light brown sugar
  6. 2 tablespoons yellow mustard

Instructions
  1. Preheat the oven as directed on the ham package and follow the instructions for baking the ham. Remove the ham from the oven about 30 minutes before the end of the warming time.
  2. Decoratively arrange the pineapple slices on top of the ham, securing them with whole cloves, if using, or toothpicks. Place a cherry in the center of each pineapple ring and secure with a clove or toothpick.
  3. In a small bowl, combine the brown sugar, mustard and just enough of the reserved pineapple juice to make a thick glaze. Spoon the glaze over the ham and bake for the remaining 30 minutes. Remove the ham from the oven, transfer to a cutting board and carve.

Ingredients
  1. 2 tablespoons olive oil
  2. 1 onion, diced
  3. 2 cloves garlic, crushed
  4. 2 1/2 pounds ground pork
  5. salt and pepper to taste
  6. 1 yellow bell pepper, cut into thin strips
  7. 1 green bell pepper, cut into thin strips
  8. 1 red bell pepper, cut into thin strips
  9. 1 (1.5 ounce) box raisins
  10. 1 bunch spinach, chopped
Instructions
  1. Heat the olive oil in large skillet over medium heat. Cook and stir the onion and garlic in the oil until tender, about 5 minutes. Remove the onion and garlic from the pan and set aside. Crumble the pork into the skillet and cook until no longer pink. Return the onion and garlic to the skillet and stir through the pork. Season with salt and pepper. Cover the skillet and cook the mixture for 5 minutes. Stir the green bell pepper, red bell pepper, yellow bell pepper, and raisins to the mixture; cover and cook another 5 minutes. Add the spinach to the skillet and stir just before serving.
